Figs usually form as the nights begin to cool in September, then are ripe usually from late September through October each year. The plant will die back to ground level in the colder climates, which is normal. In the Spring the plant will grow back and produce fruit again. You can protect them with a layer of leaves held in place around the base of the plant.
